Carrot, Orange & Almond Cake


2 medium carrots
1 organic orange, rind grated
1/2 cup dried apricots, chopped
2/3 cup maple syrup
100ml macadamia oil
160g almond meal
160g gluten free plain flour
3 eggs
1/2 tspn cinnamon
1/2 tspn nutmeg
1/2 tspn allspice
1 1/2 tspn baking powder


Pre-heat oven at 150C and grease a loaf tin.

Stir grated carrots, orange rind, chopped apricots together. Add almond meal, flour, spices, oil, maple syrup & lightly whisked eggs. Once ingredients are combined add the baking powder and stir through till all mixed thoroughly.

Pour into a lightly greased loaf tin and bake at 150C for about 45mins or until cooked through.

Enjoy it warm out of the oven!

This cake is delicious and full of fibre and nutrients such as beta carotene, vitamin K, folate, potassium, magnesium, Vitamin E, zinc, B vitamins, iron and antioxidants.
